GAPS Apple Skillet Pancake

Here are the supplies I use…

Ingredients:

6 pastured eggs
½ cup coconut milk (canned/boxed or homemade)
4 medium apples
¼ cup ghee or coconut oil
¼ cup coconut flour
1 tsp lemon juice
¼ tsp sea salt
2 Tbsp cinnamon
2 Tbsp vanilla honey or (2 T honey + 1 tsp vanilla extract)

 

Unseasoned cast iron pan (I prefer to season it myself because most companies use soy or corn oil to “season” theirs.

    Your GAPS Apple Pancake recipe arrived in my inbox very early this morning … just as I was trying to decide what kind of eggs I wanted for breakfast. What a perfect answer to my pondering! I had just purchased several organic apples and pastured eggs, so I was set. I retrieved the Pampered Chef apple-corer-slicer gadget I picked up on the cheap this year at a garage sale, and the pancake was in the oven before you could say Gutsy Girls Rock! My homeschooled son and I devoured it for breakfast, along with some tea.

    Thanks so much for sharing this recipe! I made your coconut butter over the weekend, mixed in some cacao and honey, dried cherries and sliced almonds, then cooled them in little blobs for the sweet-toothed folks in the house.

    Haven’t tried your GAPS chocolate chips cookies. That’s my next venture.

    We love apple season at our house. I want to try your recipe but my new stove doesn’t allow cast iron. I don’t know if that will make too big a difference. I too am super headache sensitive to perfume.
