I hope your Sunday is going well. I thought I would post some inspiring quotes and cooking/healthy living images for you! I am making my way through the new Fall into Health Sale Bundle books and I can’t help but think… “maybe I should write an e-book someday?” Im flipping through the pages of excellent photos and drool-worthy nourishing foods and can’t stop thinking about my own creations in the kitchen.

GAPS/Grain-free desserts!

Im going to tell you something, and I bet you will not be surprised. The most searched recipes on my site are the desserts! That is because they are fun to make together as a family and they taste sweet!

The Fall into Health Sale has lots of recipe books (look at the books here) and many of them are grain-free /GAPS friendly. I searched through a few of them looking for recipes you my be excited about! I think the Grain free cinnamon cereal looks quite good, don’t you? Inspiration…

The other thing I wanted to talk to you about is that I really want to get back into the kitchen cooking (after my long break to focus 100% on healing my body). I miss mixing up random ingredients and watching it form into something really good. I miss taking pictures and running around the house, trying to find the perfect light. I love editing the pictures and finally posting my recipe to share with YOU. I enjoy getting comments from mom’s who finally have a happy kid because they get “safe” banana bread or chocolate chips. It gives me such a feeling of accomplishment and joy.

Yes on Prop 37 giveaway: Wild Planet Seafood ($50 value)!!

Whats all the talk about GMO’s these days? Or whats prop 37?

Its more important than you may think. If you care about the world, your health, and food then you care about voting YES for proposition 37! let me do a little explaining…

 What is Prop 37?

Proposition 37 is a common-sense November ballot measure that will help consumers make informed choices about the food they eat. Written with broad input from food groups, industry, science, legal and health experts Prop. 37 (The California Right to Know Genetically Engineered Food Act) requires clear labels letting consumers know if foods are genetically modified.  (source)

If you don’t live in California, then you are probably thinking, so what? Not so fast. Dozens of countries have completely banned GMO’s because they know of their scary side affects on humans. Even though this law won’t rip out GMO’s out of of food system (quite yet..), it is a step (a HUGE step!). As you probably already know, California starts many trends for the rest of the country, so voting yes on Prop 37 could get required labels for GMO’s in your state someday!

We Have a Right to Know What’s in Our Food:  Fifty countries around the world—representing more than 40% of the world’s population—already require GMO labeling, including all of Europe, Japan, India and China. Polls show that more than 90% of Americans want to know if their food is genetically engineered. We are free to choose what we want to eat and feed our children. The free market is supposed to provide consumers with accurate information about products so we can make informed choices.  (source)

What are GMO’s

What Are Genetically Engineered Foods (GMOs)?  A genetically engineered food is a plant or meat product that has had its DNA artificially altered in a laboratory by genes from other plants, animals, viruses, or bacteria in order to produce foreign compounds in that food. This type of genetic alteration is not found in nature and is experimental.   Many of the foods we currently eat and feed our families (including certain baby formulas and a high percentage of corn, soy, cotton and sugar beets commonly used in processed foods sold in the U.S.),  but we don’t know which ones without labeling.  (source)

GMO’s are killing you!

Are Genetically Engineered Foods Safe?  GMOs have not been proven safe, and long-term health studies have not been conducted. A growing body of peer-reviewed studies has linked these foods to allergies,organ toxicity, and other health problems. These studies must be followed up. However, unlike the strict safety evaluations required for the approval of new drugs, the US Food and Drug Administration does not require safety studies for genetically engineered foods. The United Nations/World Health Organization food standards group and the American Medical Association have called for mandatory safety testing of genetically engineered foods — a standard the U.S. fails to meet.

GMOs Linked to Environmental Problems:  Various environmental problems associated with genetic engineering have been well documented, including biodiversity loss, an overall increase in pesticide use, the emergence of super weeds that are threatening millions of acres of farmland, and the unintentional contamination of non-GMO and organic crops. So your thinking, if GMO’s are deadly, then why is there such a big fight for this prop 37 to pass? What human person would want to die eating food? Not me! Check this out…

Who is Opposed to Proposition 37?  Not one human being has made a contribution to the campaign against Prop. 37.  Instead, the campaign is funded entirely by giant pesticide and junk food companies with a track record of making false claims about the safety of their products.  The “No” campaign’s two largest donors– Monsanto and DuPont—are the same companies that told us Agent Orange and DDT were safe.  Further undermining the No campaign’s credibility is the fact that its biggest funder—Monsanto—produced a series of ads supporting labeling of GMOs in Europe in the 1990s.  (source)

Coco Kefir GIVEAWAY!

Overwhelmed with GAPS?

Before I started making coconut water kefir and coconut milk yogurt, Coco Kefir was my go-to-fermented drink. When I first started GAPS, it was overwhelming and I did not make fermented things because I simply did not know how. This is why company’s like Coco Kefir exist. To help you 🙂

Do they taste good?

These two young coconut ferments taste amazing! I love them so much, I have to savor them 🙂 They are slightly sweet with a light taste . You feel energized and alive after eating or drinking Coco Kefir or Coco yo.

Coconut Chip Giveaway!

Remember those yummy Cinnamon Coconut Chips?

 oh yes..I thought you would! 🙂

Coconut chips…

Well, first off Let’s Do it Organic calls them coconut flakes. I like to call them coconut chips because I always call the small shredded coconut pieces (flakes). Really who cares what you call them, all that matters is that you can get some to make this recipe! If you cannot tell, I love coconut! Check out all the coconut recipes from my recipe page.

Can I have Coconut chips on GAPS?

Yes, after intro you can add in coconut chips. Everyone is different with timing and adding in new foods on GAPS. I introduce food so slow, and I actually have had to back away from coconut right now ( I still eat coconut oil). I do miss it, but I have to be patient with my body.

Don’t even compare yourself with anyone else on GAPS, you are unique! If you have never had coconut on GAPS then try making homemade coconut milk first (it is easier on your stomach). If you are ok with the milk, then try the chips (start with a few at a time..really they are so good, but only try a few!) They do contain a fair about of fiber, and I know this can cause problems for people on GAPS.

Are coconut chips good for you?

Coconut chips are just like coconut shreds, just in a bigger form. I use coconut shreds/flakes to make homemade coconut milk and coconut milk yogurt. Pretty much coconut flour is the same thing, just more finely shredded. Coconut comes in many different form as you see.

Low carb

Coconut chips are low in carbohydrates and high in fiber. Now you should not be scared of carbohydrates, though lots of times people on GAPS have a hard time digesting certain carbs. That is why coconut is such a life saver on the GAPS diet.

Saturated fat

Coconut chips are filled with the good fat…yup Saturated fat is the best! There looks like there is not much protein in coconut flakes, but really that label is for 3 TBS , and who can just eat 3 TBS of coconut chips? Coconut has just enough protein to keep your body running. I always say that coconut seems so complete, because it is so substantial and has great ratios.

Minerals

Since coconuts grow by the sea, they are filled with lots of good minerals for your body. Most people are deficient in minerals these days, so coconut is even more important.

Can coconut help my illness?

Native Pacific Islanders considered coconut to be a “cure for all illnesses”. Now I cannot say that it will cure you, but coconut does have a lot of benefits for your body. It helps..

  • Protect the immune system.
  • Prevent tooth decay.
  • Improves digestion and assimilation of vitamins and minerals.
  • Improve magnesium absorption! (so this is a good complement to homemade magnesium oil).
  • Kill viruses and bacteria.
  • Support thyroid function.
  • Skin, nail, and hair growth (it’s those minerals!).
  • Weight loss.
Now don’t take my word on all of this..everyone’s body is different. To see what coconut can do for your body, you will have to just try it yourself!

Coconuts are known for being high in…

  • Vitamin C (good for the immune system)
  • B1 (promotes healthy nervous system)
  • B2 (increases your body’s ability to produce energy)
  • B3 (keeps your heart healthy)

Ingredients: Organic Coconut (sliced and dehydrated). Color may vary as this product contains no sulfites

 

 What do Coconut chips taste like?

Lets Do it Organic coconut chips have a rich nutty flavor. They are not overly coconutty when you eat them plain, but if you brown them in the oven like in this recipe, then the coconut flavor because more intense and nuttier! So good.

They are slightly crispy straight out of the bag, but if you really want a crunch, you have to brown them in the oven for like 2 minutes (they cook really fast!!)

They will leave you feeling light, but satisfied. Don’t you love foods like that? That is because coconut is one of natures perfect food. Eat up!
